The grapes, sourced from a single vineyard plot, were hand-picked in the early morning hours (to avoid heat) and placed in small-capacity boxes. Whole bunches were gently pressed. Cold settling for 48 hours. Temperature-controlled fermentation. Aged on fine lees. Filtered. Second fermentation in bottle. Disgorged after 24 months. Traditional method.

Tasting notes

Lemon-yellow in color, it displays fine and persistent bubbles. The aromas are fresh and fruity, characteristic of the Arinto grape variety. On the palate, it reveals a delicate balance between acidity and alcohol. There are also mineral notes and a pleasant complexity, finishing long and elegant.

A highly versatile wine, it pairs well with a variety of cuisines but can also be fully enjoyed on its own.
